The good news? Meal prep doesn’t have to mean spending your entire Sunday cooking five different meals and filling your refrigerator with perfectly labelled containers.
Instead, prep the building blocks, the foundations.
A little preparation at the beginning of the week can turn a chaotic morning into a grab-and-go breakfast, a packed lunch into something you can assemble in minutes, and the dreaded 5 p.m. question of “What’s for dinner?” into something much more manageable.
You don’t need to prepare everything. You just need to make the healthy choice the easy choice.
Here are 10 things worth prepping on Sunday to make your back-to-school week run a whole lot more smoothly.
1. Gluten-Free Sourdough Bread or Rolls
Having good bread ready to go can make an enormous difference during a busy week. Purchase or bake gluten-free sourdough and store it so it’s ready for sandwiches, toast, breakfast, or an easy afternoon snack. You can also portion rolls individually so they’re simple to grab for school lunches.

2. Hard-Boiled Eggs
Make a batch of hard-boiled eggs and keep them refrigerated for an easy protein option throughout the week.
They’re great alongside breakfast, sliced into a sandwich, added to a lunchbox, or eaten with fruit and veggies for a quick snack. One small prep job can give you several easy meals.
3. Roasted or Shredded Chicken
Cook one large batch of chicken and use it in different ways throughout the week.
Add shredded chicken to:
Gluten-free sourdough sandwiches
Salads
Rice or grain bowls
Wraps
Soups
Quick dinners with roasted vegetables
The trick is not making seven portions of exactly the same meal. Prepare one versatile protein that can become several different meals.
4. Wash and Chop Your Fruit
Fruit is one of the easiest foods to skip when you’re rushing out the door — particularly when it still needs washing, peeling or chopping.
Spend 10–15 minutes on Sunday washing and preparing whatever your family enjoys. Think berries, grapes, melon, apples, oranges or whatever is currently in season. Store everything where it’s easy to see and grab. A fruit salad with a squeeze of organge/lemon juice and honey preserves beautifully too.
5. Cut Your Vegetables
The same goes for vegetables. Wash and cut carrots, cucumbers, peppers, celery, blanched broccoli or whatever your family likes to snack on. Once they’re ready, they can go straight into lunchboxes or onto a plate with dinner. The goal isn’t perfection. It’s reducing friction. When vegetables are already prepared, you’re far more likely to actually eat them.
6. Make a Homemade Dip
A simple dip can make vegetables, crackers and leftover protein considerably more appealing. Try hummus, guacamole, a yoghurt-based dip, pesto, roasted courgette with sour cream, or another favourite homemade option. Keep a container in the refrigerator and use it throughout the week for snacks, lunchboxes and easy meals.
7. Bake a Batch of Breakfast Muffins
School mornings are not always the time for elaborate breakfasts. Make a batch of nourishing muffins on Sunday and freeze some for later in the week. Pair one with eggs, nut butter, fruit or another protein source for a breakfast that can actually keep everyone going until lunch. This is also a great way to use up ripe bananas or seasonal fruit.
8. Prepare Overnight Oats
If your mornings are particularly hectic, breakfast can be prepared before the week even begins.Make individual jars of overnight oats using oats, milk of choice, chia seeds, cinnamon, berries, nut butter or other favourite toppings.You can prepare several portions at once and simply grab one from the refrigerator in the morning. Finally, make one substantial component that can carry you through several meals. A big pot of soup is perfect for lunches and quick dinners. Alternatively, prepare a large batch of protein — chicken, beef, turkey or another family favourite — and build different meals around it throughout the week. You don’t need to know exactly what you’ll eat on Thursday. Just make sure Thursday-you has something in the refrigerator that makes dinner easier.
Meal Prep Doesn’t Have to Mean Meal Perfection
The best meal prep system is the one you can actually maintain. You don’t need to spend your entire Sunday cooking. You don’t need matching glass containers. And you certainly don’t need to prepare every meal for the next seven days.
Instead, ask yourself: What can I do today that will make tomorrow easier? Wash the fruit. Boil the eggs. Cook the chicken. Bake the muffins. Slice the sourdough. Prepare the oats. Order the things you don’t have time to make yourself. Those small decisions add up.
